Potato pancakes (makes 14, roughly)




2 small potatoes
1 onion
300g of cheddar cheese, grated
Half a red pepper, diced
150g of corn flour/starch
1 small egg
2tbsp of milk
Salt and white pepper to season

1. Peel and dice potatoes, boil them for 3 minutes. Drain then run under a cold tap to cool then. (Just so they don't melt the cheese)

2. In a bowl mix the onion and the pepper with the grated cheese then add the potatoes.

3. Season with salt and white pepper. Add the milk and the egg and mix it all together.

4. Add the corn flour/starch to the bowl (do NOT mix with water beforehand like you're supposed to) it should then be quite a thick consistency.

5. Add oil to a frying pan, let it get quite hot. Add spoonfuls of the mixture and flatten down with the back of a spoon. Cook until golden brown on each side.

6. Pat each pancake gently with kitchen til to remove excess oil and enjoy :)

Easy chicken curry :)

Makes enough for four

3 large chicken breasts, cut into chunks
2 large onions, diced
3 large tomatoes, cut into chunks
2 tbsp mild/medium/hot curry powder (depending on how hot you like it)
2tsp of paprika
2tsp of turmeric
2tsp of cumin
1tbsp of tomato purée
250ml of double cream


1. Heat oil in a pan and slowly fry the onions, add all the spices and cook for 3 - 5 minutes.

2. Add the chopped tomatoes and the tomato purée and let the tomatoes soften for a few minutes

3. Add the cream and let the species disperse into it.

4. Add the chicken and let it all simmer for about 15 minutes or until you have the amount of liquid you like to have in a curry. Just make sure the chicken is cooked before you serve.

5. Serve over basmati rice.

Note: to make this curry vegetarian, cook broccoli cauliflower potato and carrots and add it instead of the chicken.
